Wow, it's been a long time since I've posted and I'm not even sure why I'm posting now. Oh, I remember now, I've been in a whirlwind, roller coaster ride, anything else that represents chaos with a calming end. To ease back into things, why not start with a simple salad. I made this for my wife's lunch for the week. I had her taste it and it was love at first bite. hope you find it to be as enjoyable as she did. cheers!
I used 2 cans of Black Eyed Peas, drained and rinsed and ready to roll...please don't roll 'em. I put them on a strainer to get rid of any excess liquid because this will be a wet salad with the dressing and juice from the tomatoes.
I didn't photography each ingredient because it's pretty straight forward, but I did want to show you how I dice a tomato. Not only is it fun, it's a good display of a sharp knife! It's also really fun to do.
In a separate bowl, whisk together the red wine vinegar and turbinado sugar to dissolve it then while whisking, add the olive oil slowly. Once you're happy with the incorporation, get ready for the fun part!
Mix the dressing with the vegetables and mix it well. Add some chopped cilantro, season with salt and pepper, enjoy it like Jesse Pinkman enjoys saying....well, you know.
Ingredients:
2 cans of black eyed peas, drained and rinsed
1 small red or orange bell pepper, diced
1 large tomato, diced
1 medium red onion, diced
3/4 cup of scallions, chopped from the bottom end
1/4 cup of cilantro, fine chopped
Dressing
1/4 cup of red wine vinegar
3 Tbsp of turbinado sugar, light brown sugar is a good substitution
3 Tbsp of extra virgin olive oil
(if you want a little heat, add a little bit of red pepper flakes)
